The rib eye steak cut comes from a 24 months old Organic Black Angus, who was bred in Ireland. Lived like a lord and fed on a grass rich in red shamrocks for the first 12 months and on a grass rich in green shamrocks for the last 12 months. Its meat contains more Omega 3 fatty acid than the one of a grain-fed beef. This piece has excellent marbling, which creates its savory buttery flavor and tenderness. The rib eye steak is one of the best cuts to put on a grill.

Instructions
Slightly rub the meat with organic olive oil, place it on the grill or other cooking material and brown each side for 2 minutes until you get a nice caramelization, then put it in the oven at 180°c for 5 to 12 minutes depending on how cooked you want your meat. After taking it out of the oven, let it rest as long as the cooking time took in order to let the blood spread uniformly in the muscle, which will give an extraordinary tenderness to your beef piece. Note that the oven is optional and the meat can be completely cooked in the grill or the pan, remember though to lower the fire or the heat in order not to burn the juices.
A little bit of Fleur de Sel is finished and it's perfect!

COOKING TIME: 10 MINUTEs
Ingredients :
- 1 branch fresh thyme
- 1 Tbsp oil
- 1 nut of butter
- Salt and freshly ground pepper
Recipe preparation :
- Remove the meat from the refrigerator at least one hour before cooking.
- Choose a frying pan the size of the entreribs to cook, but not larger. Melt the butter and oil mixture to have a very hot frying pan before laying the meat.
- Place the meat on the very hot pan and move it so that it does not attach. Place a sprig of thyme or herbs on the meat while cooking the first side.
- Depending on the thickness of the meat and the desire to cook (blue, rare, cooked) cook 2 to 10 minutes per side. In general, 5 minutes is enough.
- Once the desired doneness is reached, let it rest 5 minutes with aluminum foil on top to let it relax while keeping its heat before serving.
