Fished in the deep, clean and wild waters off the coast of Mozambique in the Indian Ocean, our lobster is the most sought-after crustacean of gourmets due to the finesse of its flesh. Delicious Secret therefore had to offer you to discover or rediscover the delicate taste of the seafood queen, all in the respect of a fair fishery (according to the rules of the Washington Convention). Our product was of course frozen on board just after fishing in animal welfare-friendly conditions.
Grilled or boiled, there will be something for everyone! Crayfish can lend themselves to many culinary accommodations. Low in fat but rich in protein, this food has more assets than it needs to justify its undisputed popularity!

Instructions
Wash the product carefully in running water. The product is ready to be cooked
Store at -18 ° C.

Recipes
PREPARATION TIME: 15 MINUTES
COOKING TIME: 20 MINUTES
Ingredients :
- 2 lobsters between 150 and 300g each
- 10 cl dry white wine
- 4 cl white wine vinegar
- 65g of butter
- ½ tablespoon oil
- ½ vanilla bean
- ½ lime
- Salt and pepper
Recipe preparation :
- Pour white wine and vinegar into a saucepan. Reduce over medium heat to obtain 2 tablespoons of liquid. Set aside.
- Flatten the vanilla beans. Split them lengthwise, then scrape the pulp with the knife. Place on a small plate. Cut the butter into cubes.
- Cut the lobsters in half lengthwise. Preheat the oven to 270°C (thermostat 9).
- Heat the oil in a large roasting pan. Arrange the lobster halves flesh side down. Bake them for 5-6 min. turning them halfway through cooking, then salt and pepper them, let them relax at the entrance of the oven off.
- Heat the wine reduction over low heat. Stir in, whisking the butter cubes together. Season with salt, pepper, vanilla pulp and a final whip.
- When ready to serve, place the lobster halves on warmed plates with carapaces underneath. Drizzle with a little white butter. Serve the rest as a sausage. Garnish with half-slices of lime.

Dommage aussi, le conditionnement, les langoustes non calées étaient baladeuse dans la boîte, et les antennes, en mille morceaux...
