Suggested Recipe: Sturgeon Fillet with White Butter Sauce and Dill
Ingredients (for 2 people)
2 sturgeon fillets (400 g each)
150 g unsalted butter, well chilled
1 shallot, finely chopped
100 ml dry white wine
50 ml white wine vinegar
Salt, pepper
A few sprigs of fresh dill (Anette)
Preparation
Cook the fish:
White butter sauce:
In a small saucepan, reduce the shallot with the white wine and vinegar until only about 2 tablespoons of liquid remain.
Off the heat, whisk in the cold butter cubes gradually to emulsify.
Season with salt and pepper.
Finish:
Add the chopped fresh dill to the sauce just before serving.
Pour the creamy, aromatic sauce over the sturgeon fillets.
